The Parador that preserves the history of Castile

The Parador de Ciudad Rodrigo is much more than an historical accommodation; it is a silent witness to the vicissitudes of Castile. Its origins date back to 1372, when Henry II of Castile, after the siege and pacification of the city in the war with Portugal, ordered the reconstruction of the fortress. Located next to the Águeda River and strategically close to the border, its design follows the traditional model of León castles: an imposing square tower surrounded by an enclosure with lime and stone cubes, reinforced corners and walls crowned by battlements and machicolations. The oldest part, the inner enclosure, is dominated by the majestic keep, the true core of the citadel. Throughout the 15th century, the fortress was protected by city walls and later, a second oval walled perimeter surrounded the city, giving shape to the current location of the Parador. During conflicts such as the War of the Spanish Succession and the War of Independence, the castle was again badly damaged, until it was restored in 1928. Stripped of its military function, it first housed the regional museum before becoming a Parador on the initiative of the city council in 1931.

The Parador de Ciudad Rodrigo stands out for its impressive keep, a sturdy structure measuring 17 metres on each side that dominates the centre of the grounds. Its battlements give it an imposing presence, while the twin Gothic arches on its façade add a touch of medieval refinement.

A trip to this place is not only a journey through history, but also a sublime gastronomic experience. With the dehesa meadows of Salamanca as a source of ingredients, the Parador offers the best of Charra cuisine, with products such as Iberian pork and Moorish beef as features. From artisan cured meats and succulent roasts to the iconic Guijuelo acorn-fed ham and the famous farinato, every bite is a delight for the palate.

Centuries of history in an imposing fortress

With Cardona at your feet and the Pyrenees silhouetted in the distance, you will feel like a true conqueror, just as Charlemagne did when he reclaimed this territory. The Parador de Cardona is located in one of the most imposing medieval complexes in Catalonia, a fortress that has enriched its legacy over eleven centuries, with towers, Gothic walls, an imposing moat and other items that have marked its history. Its architectural treasures include the gallery of pointed arches, a delight for lovers of history and art, and the Minyona tower, a 10-metre cylindrical watchtower which, according to legend, served as a prison for the daughter of the lords of Cardona, imprisoned to prevent her love affair with a young Muslim.

But beyond the stories and myths, the real experience is in the restaurant, where you can enjoy an exceptional medieval menu. Under its majestic pointed arches, the flavour of tradition comes to life in dishes with character and made with local products: from the various preparations of cod with brandade to escudella soup, including an assortment of Catalan cured meats accompanied by crispy coca de cristal bread and penjar tomato, roasted vegetables and seafood suquet with lobster. Leaving the Parador will be difficult, but the setting invites you to continue exploring.

The historic centre of Cardona, declared a Cultural Asset of National Interest, is a must-see destination, with its strategic role on the Al-Andalus frontier. You can also marvel at the Salt Mountain, a natural phenomenon of immense value in times gone by. And with spring unfolding its magic, it is the ideal time to visit the impressive Romanesque monuments, such as the Cardener Fountain, or venture on a hike or bike route through the Montserrat Natural Park. A unique opportunity to immerse yourself in the charm of history and nature.

A fortress with charm

They say that appearances can be deceptive, and the Parador de Zafra is proof of this. Its imposing fortified structure, with its nine towers, gives the impression of an austere, medieval enclosure, but behind its walls you can discover modern, elegant interiors that achieve a harmonious fusion with the history it has accumulated over the centuries. This balance is reflected in the exquisite coffered ceilings, delicate ironwork and handrails that tell the story of its past. It is no exaggeration to say that, by staying here, you will be sharing the same environment as Hernán Cortés, as this fortress, which was once an Alcázar, the palace of the Dukes of Feria and a Muslim fortress, had the famous conquistador among its guests.

Before losing oneself in the labyrinth of streets of the old walled town of Zafra, where you can discover gems such as the Collegiate Church of Santa María de Candelaria, the Monastery of Santa Clara, the Convent of Santa Catalina and the churches of Santa Marina, recharge your batteries in the Parador's restaurant. The culinary offering promises a delicious experience: from the traditional migas del pastor with eggs, chorizo and bacon, to the cod casserole with ratatouille, the lamb stew with Corderex designation of origin or the Iberian sirloin with Torta de Barros. And for the finishing touch, nothing better than the bishop's hearts from the convent of Las Clarisas, figs from Almoharín on cream or acorn tart. A feast hard to forget.

Once you have explored the historic centre, you will be tempted to venture further afield, especially if you enjoy nature on your travels. The Cornalvo Park offers you the chance to follow fascinating routes, and in the surrounding area you'll find majestic mountain ranges, such as the Hornachos, Tentudia and Aracena. A perfect setting to unwind and immerse yourself in unique landscapes this spring.
