Ten kilometers from the impressive set of cliffs that adorn the famous beach of Las Catedrales in Galicia, is the Parador de Ribadeo. The Hostería del Estudiante, in Madrid's Parador de Alcalá de Henares, is the best place to travel back in time. The establishment is originally from the sixteenth century, wrapped by huge wooden beams, stone walls, a fireplace where people used to cook five centuries ago and period coppers that dress the space. Illustrious figures such as  Federico García Lorca have passed through this little corner to taste its tasty migas with chocolate. The Parador de Cruz de Tejeda is a perfect refuge to find peace and tranquility. Its landscape is dominated by what the writer Miguel de Unamuno called the 'petrified tempest': the impressive volcanic caldera of Tejeda, with the imposing Roque Nublo and Roque Bentayga emerging. Lunch on the terrace of the Parador is equivalent to 'eating among the clouds', as it is located at an altitude of more than 1,500 meters above sea level. From here, you can see the Teide, the mysterious island of La Gomera and, if you are lucky, the silhouette of the island of El Hierro. In addition, you can witness spectacular sunsets and sunrises tinged with reds, purples or blues. The gastronomy, the undisputed protagonist, offers authentic delicacies such as escaldón de gofio, the comforting watercress stew and the exquisite bienmesabe, a traditional Canarian dessert that will delight your palate with its unique flavor.

We cannot overlook the privilege of enjoying a terrace in an ancient medieval castle, and the Parador de Oropesa, in Toledo, offers just that. This enclave, which in the past housed soldiers, religious and aristocrats, has now been transformed into a historic space full of charm.
