Fran Martínez
Although he is from Elche (Alicante), he settled in Castile-La Mancha, where he is in charge of the kitchen of the Moralba Restaurant, awarded with one Michelin star. He is defined by a creative cuisine that combines perfectly well tradition and avantgarde with touches from Alicante.
Iván Cerdeño
Despite being so young, Cerdeño can show off about a career that has allowed him to work in culinary temples such as El Celler de Can Roca and Rodero. His refine technique allows him to elaborate modern, light dishes as well as more traditional recipes, in which the traditional flavours stand out.
Manuel de la Osa
He is such a self-made man of the cuisine from Castile-La Mancha. He is proud of having learnt to cook with his mother and grandmothers. The old recipes from Castile-La Mancha shine as never before in his restaurants: Las Rejas and Ars Natura. He has been awarded with one Michelin star and he mixes up textures and flavours that he introduces in amazing, delicate dishes.
José Carlos Fuentes
Fuentes, cook of the Year in 2010 and awarded with a Michelin star, worked for seven years with a prima donna of the Mediterranean cuisine: Carme Ruscalleda. Nowadays, he runs in Toledo the Tierra Valdepalacios Restaurant, located in the homonymous hotel.
Pepe Rodríguez
Chef at El Bohío Restaurant and the life and soul of the Spanish version of Master Chef, he proposes a very personal cuisine, with a great academic background. His dishes are simple and balanced, inspired by the traditional recipes from Toledo, with strong flavours and elaborated with modern techniques.
José Soler
Chef at the Parador de Toledo, Soler was born in Jaén, but he is specialised in the traditional cuisine from Castile-La Mancha. His career has been linked to the Network of Paradores, since he has worked in Sigüenza, Chinchón, Benavente and Ronda.
