Mountain cuisine in the shelter of Monte Perdido
The cuisine of the Huesca Pyrenees is, like all mountain cuisine, hearty and authentic. In this setting, the Parador de Bielsa is a gastronomic reference for its carefully selected menu and for the preparation of typical dishes with quality local products such as Aragonese lamb, D.O. Teruel ham, Barbastro pink tomato and bread baked in the oven in Labuerda.
A cosy gastronomic shelter
The restaurant of the Parador de Bielsa is located on the first floor of this cosy mountain shelter. A warm space with wooden floors and beams, decorated with wrought iron lamps, which offers spectacular views of the Pineta valley and the waterfalls of the Cinca river. Refuel with some migas aragonesas (fried breadcrumbs), a succulent roast veal, a fine Cinca trout or a good wild boar stew washed down with Somontano wines.

Shelter in the midst of the Wild Pyrenees
The building, constructed in 1968 and renovated in 2025, features modern architecture. Its aesthetic, inspired by a mountain refuge, is characterized by the predominant use of stone and wood. Its cuisine, a point of reference in the region, is noteworthy for its inclusion of game, veal from Aragon, and homemade desserts such as Pasteras and Teresitas.
The Pineta Valley is the most spectacular enclave in the Wild Pyrenees. An impressive cirque born from glacial ice and the waters of the river Cinca, which sustains this landscape of waterfalls, beech forests and the impressive vegetation that abounds in this area. It is also the gateway to the Ordesa y Monte Perdido National Park, a UNESCO World Heritage Site.
The beautiful town of Bielsa has an old quarter with gems such as the Romanesque chapel of Nuestra Señora de Pineta. It’s famous for its carnival, held at the end of winter, when unique characters parade through the streets and ancestral traditions are renewed.
